Ingredients

  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp fenugreek seeds
  • 1 tsp coriander seeds
  • 1 tbsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/4 tsp chili flakes, optional
  • Black pepper, to taste
  • 1 1/2 cups dried lentils, rinsed
  • 1 small can diced tomatoes (14-15 oz / 400 g)
  • 1/2 can coconut milk
  • 500-700 ml vegetable broth
  • Vegetable options: choose 3-5 cups total from carrots, bell peppers, cauliflower, broccoli, potatoes, sweet potatoes, green beans, or peas.

Method

  1. 1Press Saute and allow the pressure cooker to heat.
  2. 2Add onion with a splash of vegetable broth or water. Cook until lightly caramelized, about 5-7 minutes.
  3. 3Add garlic and ginger. Stir for 30 seconds.
  4. 4Add cumin seeds, fenugreek seeds, and coriander seeds. Cook until fragrant.
  5. 5Stir in garam masala, cumin, coriander, turmeric, chili flakes, and black pepper.
  6. 6Add your vegetables and cook for 2-3 minutes, stirring frequently.
  7. 7Add lentils, coconut milk, and vegetable broth. Stir gently.
  8. 8Pour diced tomatoes on top. Do not stir.
  9. 9Close lid and set valve to Sealing.
  10. 10Pressure cook for 4 minutes with cauliflower, broccoli, or softer vegetables. Use 5-6 minutes if adding potatoes or sweet potatoes.
  11. 11Allow natural pressure release for 20 minutes.
  12. 12Stir well and let rest for 5 minutes before serving.

No pressure cooker? No problem

No pressure cooker? Use a large pot. Follow the same steps through adding the tomatoes, then simmer uncovered for 25 to 30 minutes, stirring occasionally, until the lentils and vegetables are tender.

Petra's Tips

  • I make a big batch of this on Sundays. It tastes even better the next day, so leftovers are a good thing here.
  • Using cauliflower or broccoli? 4 minutes keeps them tender without turning to mush.
  • Potatoes or sweet potatoes need a bit longer. Give them 5 to 6 minutes.
  • Want extra greens? Stir in a handful of spinach right at the end, off the heat.
  • This is lovely over quinoa, with boiled potatoes, or alongside a big salad. Happy cooking!
