Fresh Basil
Tear, never chop. The flavour is concentrated in the whole leaf. Add at the very end of cooking. Make pesto in batches while it's plentiful and freeze in ice cube trays.
Storage: Keep in a glass of water at room temperature, like cut flowers. Never refrigerate.
